Mom’s Perfect Banana Bread

Ingredients

  • 1.8 cups
    Flour
  • ⅔ cup
    Sugar
  • 2 teaspoons
    baking powder
  • ½ teaspoon
    Baking soda
  • ¼ teaspoon
    Salt
  • 1 cup
    Ripe bananas, Mashed well, 2-3
  • ⅓ cup
    Butter
  • 2 tablespoons
    Milk
  • 2
    Eggs
  • ½ cup
    Nuts, Chopped, Optional
  • ⅓ cup
    Chocolate chips, Optional
  • Parchment Paper

Preparation

  1. Preheat oven to 350degrees

  2. In a large mixer bowl, combine 1 cup flour, sugar, baking powder, baking soda, and salt.

  3. Add mashed banana, butter, and milk

  4. 2 mins

    Beat with an electric mixer on low speed until blended, then on high speed for 2 mins

  5. Whisk eggs separately, add eggs and remaining flour, beat till blended

    Stir in chocolate chips or nuts

  7. Spread parchment paper evenly throughout a loaf pan, trying to remove as many creases as possible

  8. Pour batter into loaf pan

    Bake the loaf in the oven for 55-60mins, testing with a toothpick to make sure the center is not gooey

  10. 10 mins

    Let the loaf sit in the pan until cool

  11. 1 day

    Remove the loaf from the pan and let sit overnight/for one day before slicing
