  • 1 pound
    ground turkey
  • 10 ounces
    frozen spinach, chopped, thawed and drained
  • 1 cup
    mozzarella cheese, shredded
  • ½ cup
    whole wheat breadcrumbs

    egg, beaten
  • garlic, minced
  • ¾ cup
    Italian dressing, divided
  • For the Sauce
  • roasted red peppers, drained

  1. Heat your oven to 350°F and grease a 13x9-inch baking pan.

  2. Squeeze that spinach until every drop of water is gone - my ayeeyo always said soggy vegetables ruin good meat. In a large bowl, combine the turkey, drained spinach, mozzarella, breadcrumbs, egg, garlic, and 0.25 cup of the Italian dressing. Mix with your hands until just combined. (Don't overmix or the loaf will be tough)

  3. Shape the mixture into a 9x4-inch loaf in your prepared pan. This is like forming suqaar, but bigger - keep your hands damp so nothing sticks.

  4. 50 mins

    Bake for 50 minutes or until the internal temperature reaches 165°F. Let it rest for 10 minutes before slicing.

  5. While the loaf rests, blend the roasted red peppers with the remaining 0.5 cup Italian dressing until smooth. Taste and adjust seasoning as needed.

  6. Slice the meatloaf and serve with the red pepper sauce spooned over each portion.
