Heat a medium nonstick skillet over medium-high heat. Add 1 tablespoon olive oil and the sausage patties.
Cook patties 4 minutes per side until nicely browned and cooked through. Remove from pan and set aside.
Add remaining tablespoon olive oil to the same pan. Toss in bell peppers, onions, salt, pepper, and red pepper flakes.
Cook vegetables about 5 minutes until tender but still with some bite. You want them soft but not mushy.
Pile the cooked veggies on top of the sausage patties and return the empty pan to the stove.
Add butter to the pan and let it melt completely.
Build your sandwiches: place 2 bread slices in the pan, top each with a slice of cheese, a sausage patty with its veggies, another slice of cheese, then the remaining bread slices. (Press down gently with a spatula to help everything stick together)
Cook 2-3 minutes per side, pressing occasionally, until bread is golden brown and cheese is melted.
While sandwiches cook, warm the marinara sauce in the microwave for about 30 seconds.
Cut sandwiches corner to corner and serve immediately with warm marinara for dipping.
Cost per serving runs about $4.50, but you can cut that down by using store-brand cheese and buying sausage when it's on sale. The leftover marinara keeps for a week in the fridge.
