Dorm Room Mexican Sausage Wraps

When you find beef sausages on clearance at Winn-Dixie and need to make them stretch for three meals.

Ingredients

  • 2 tablespoons
    olive oil (or whatever oil you have)
  • 4
    beef sausages (Johnsonville or Great Value work)
  • 1
    yellow onion, chopped
  • garlic, minced
  • 1
    taco seasoning packet (Old El Paso)
  • ½ cup
    water
  • canned four-bean mix (drained)
  • 1 cup
    frozen corn kernels
  • 4
    flour tortillas (Mission brand)
  • 2 cups
    iceberg lettuce, shredded
  • 2
    tomatoes, diced
  • 1 cup
    shredded cheese (whatever's cheapest)
  • 1
    lime, cut into wedges

Preparation

  1. 8 mins

    Heat oil in your biggest pan (or use the hot plate if your RA isn't around). Add the sausages and cook them, turning occasionally, until they're browned and cooked through - about 8-10 minutes.

  2. Remove sausages and slice them thin. Don't clean the pan - all that good stuff is staying.

  3. 5 mins

    Throw the chopped onion and garlic into the same pan. Cook until the onion gets soft and translucent, maybe 5 minutes.

  4. Add the sliced sausages back in along with the taco seasoning packet and water. Bring it to a boil. (The water helps distribute the seasoning and prevents burning)

  5. 3 mins

    Toss in the drained beans and corn. Stir everything together and cook until it's all heated through, about 3-4 minutes.

  6. 30 secs

    Warm your tortillas in the microwave for 30 seconds or wrap them in a damp paper towel and nuke for 45 seconds.

  7. Assembly time: Put some lettuce on each tortilla, pile on the sausage mixture, top with diced tomatoes and cheese.

  8. Fold the sides over to make a wrap. Serve with lime wedges because the acid really makes this pop.

Notes

This costs about $2.50 per serving and tastes way better than Chipotle. Marcus ate three of these last time I made them. Struggle meal rating: 3/10 - actually pretty legit.
