Ingredients

  • 12 ounces
    goat cheese, room temperature
  • 2 teaspoons
    fresh thyme, finely chopped
  • 2 teaspoons
    fresh tarragon, finely chopped
  • 2 teaspoons
    fresh chives, finely chopped
  • Kosher salt and freshly ground pepper to taste
  • 8
    dried apricots, quartered
  • ¾ cup
    pistachio nuts, finely chopped

Preparation

  1. 10 mins

    Mix cheese, herbs, salt and pepper in a bowl. Using your hands, roll mixture into 1" balls.

  2. 10 mins

    Using your thumb, make a hole in each ball, press an apricot piece into center, and then mold cheese around apricot.

  3. 10 mins

    Roll in pistachios and place on parchment paper-lined baking sheet.

  4. 20 mins

    Chill 20 minutes before serving.
