Cheese Ravioli Filling

I've been doing these forever. Still experimenting with ratios in this written version, since I normally measure with my heart.

Ingredients

  • 1 cup
    ricotta
  • ½ cup
    shredded mozz
  • ¼ cup
    parmesan
  • ½ teaspoon
    lemon juice
  • 1 teaspoon
    dried thyme
  • 1 teaspoon
    dried oregano
  • ⅛ teaspoon
    freshly grated nutmeg
  • 1
    egg

Preparation

  1. 5 mins

    Mix together shredded mozz, ricotta, parmesan, fresh nutmeg nutmeg, lemon juice, thyme, oregano. Add one egg and gently mix until incorporated.
