Couscous Mozzarella Arancini

It's like a cross between arancini and a mozzarella stick, and as delicious as both.

Ingredients

  • 1 cup
    pearl couscous
  • 1 tablespoon
    butter
  • 1½ cups
    water
  • 8 ounces
    shredded mozzarella
  • 1
    egg
  • ½ cup
    bread crumbs
  • 1 tablespoon
    Italian seasoning
  • cooking spray
  • salt + pepper

Preparation

  1. 2 mins

    Melt butter in a saucepan over medium heat. Add couscous and saute briefly to lightly toast couscous. Season with salt and pepper.

    Add water and cover with a lid, and cook for 8 minutes (or according to package instructions).

    Drain any excess water from the couscous and remove from heat. Add shredded mozzarella and stir to combine.

  4. Crack egg into a bowl and whisk it together. In a separate bowl, add bread crumbs, Italian seasoning, salt, and pepper, mixing together to combine.

    Once couscous is cool enough to handle, form into balls with your hands, tightly packing couscous together. Cover in egg and coat in bread crumb mixture. Place in air fryer basket.

  6. 10 mins

    Spray with cooking spray and cook at 390°F for 10 mins or until golden and crispy.

  7. Serve with marinara sauce and enjoy!
