My homemade spice rub for ribs, but you can use it for anything you want, really. This is by default a mildly spicy rub, but the substitutions noted below will lead to a much less spicy version, depending on how many substitutions are made.

Ingredients

  • 8 tablespoons
    Brown sugar
  • 3 tablespoons
    Kosher salt
  • ½ teaspoon
    Garlic powder
  • ½ teaspoon
    Mustard powder
  • ½ teaspoon
    Rubbed thyme
  • ½ teaspoon
    Ground cinnamon
  • ½ teaspoon
Old Bay seasoning, substitute celery salt for less spicy
  • 1 tablespoon
Chipotle powder, substitute extra garlic powder and cinnamon for less spicy
  • ½ teaspoon
Ground black pepper, substitute extra salt and thyme for less spicy

Preparation

  1. Add brown sugar to a mixing bowl. Make sure it is properly de-clumped.

  2. 1 min

Add the remaining spices and mix well. For a less spicy version, make as many substitutions as you'd like as noted above.

Notes

Makes just enough for coating my Instant Pot Baby Back Ribs recipe (cinc.kitchen/recipes/cxTk...).
