Ingredients

  • 3 pounds
    pork spareribs, St. Louis cut
  • 2 tablespoons
    five-spice powder
  • 2 tablespoons
    brown sugar
  • 1 tablespoon
    kosher salt
  • 1 teaspoon
    garlic powder
  • ½ teaspoon
    white pepper
  • ½ cup
    hoisin sauce
  • 3 tablespoons
    soy sauce
  • 2 tablespoons
    rice vinegar
  • 1 tablespoon
    sesame oil

Preparation

  1. Mix five-spice, brown sugar, salt, garlic powder, and white pepper in a bowl. Rub this all over your ribs like you mean it.

  2. 2 hrs

    Let them ribs sit on the counter for about 2 hours. Don't rush this part.

  3. While you waiting, whisk together hoisin, soy sauce, rice vinegar, and sesame oil for your glaze.

  4. 5 hrs

    Get your smoker going at 225°F. Put them ribs bone-side down and let them go for about 5 hours. (If you ain't got a smoker, your oven at 275°F works too)

  5. 30 mins

    Last 30 minutes, start brushing that glaze on every 10 minutes or so. You want them ribs looking glossy and right.

  6. 10 mins

    Pull them when the meat pulls back from the bone and you can twist a bone loose easy. Rest for 10 minutes, then cut and serve with extra sauce.
