Remove the membrane from the ribs, and slice to ~3 ribs per piece. In a large mixing bowl, rub the spice rub generously onto the ribs. Put them in the refridgerator to chill for at least 1 hour.
Add carrots and onion to the Instant Pot and turn on Saute mode, and saute lightly for 2-3 minutes.
Add the braising liquid ingredients, and continue to saute until the liquid begins to steam/boil.
Add the ribs into the braising liquid. Set the cooker to Manual, high pressure at 32 minutes.
The Instant Pot will take around 10 minutes to get up to pressure.
Once done, do a 5 minute natural release, and begin preheating the oven to 400°F.
Remove the ribs and place them on a baking sheet, along with the quartered mushrooms. Set the Instant Pot to Saute mode and reduce the braising liquid to create a glaze. (Optional: add some of your favorite bbq sauce during this step!)
Slather the ribs with the glaze, and place in the oven for 5-10 minutes, until caramelized.
Use kitchen tongs to remove the ribs from the baking sheet, cuz they'll fall apart super easily. Garnish with green onion. Plate, serve, and enjoy!
