Instant Pot Pulled Pork

Pressure cooker pulled pork recipe I found on the internet, and modified to my tastes and preferences. I like the apple-ness of this recipe, but other base liquids such as root beer, Dr Pepper, or apple cider vinegar are also really good.

Ingredients

  • 2 pounds
    Pork shoulder
  • ¾ cup
    Angry Orchard, 1/2 bottle
  • ½ cup
    Schoenauer Apfel Schnapps, ~3 shots
  • 1½ cups
    BBQ Sauce
  • 2 tablespoons
    your favorite spices, e.g. brown sugar, salt, pepper, cayenne, paprika, dry mustard, etc.

    Pineapple, sliced into 1 inch chunks optional
  • 4 ounces
    Diced jalapenos, canned optional
  • 2 ounces
    Garlic, minced optional

Preparation

  1. 5 mins

    Trim the excess fat off of the pork shoulder, and cut into 4 pieces. Rub your favorite spices on the pork on all sides.

  2. 10 mins

    Select Saute mode and brown the pork shoulder quarters. Then remove the pork and put a trivet into the pot, and replace the pork on the trivet

  3. 2 mins

    Mix the Apfel schnapps, Angry Orchard, and 1/2 cup of your BBQ sauce in a separate bowl. Once mixed, pour over the pork in the pot.

    Put the garlic, jalapeños, and pineapple in the pot surrounding the pork.

  5. 50 mins

    Select High Pressure, and cook for 50 minutes.

  6. 10 mins

    The Instant Pot will take around 10 minutes to get up to pressure.

  7. 15 mins

    Do a 15 minute natural release, and then quick release any remaining pressure.

  8. 15 mins

    Remove the meat to a separate platter, and select Saute mode to simmer the cooking liquid down to 1/2 cup. While the liquid is simmering, shred the pork with a pair of forks.

  9. 3 mins

    Once the cooking liquid is at 1/2 cup, place the shredded pork and remaining 1 cup of BBQ sauce in the cooking pot. Stir to combine and bring to a simmer.

Notes

You can do pretty much anything with pulled pork. Put it on a toasted bun with some garlic butter and pepperjack cheese, put it on a salad, eat it with pasta--the possibilities are practically endless.
