Heat your oven according to whatever the potato box tells you. Follow their mixing directions too - they know their fake potatoes better than I do.
Mix the potato mixture with the diced onion in a large bowl. At least the onion is real.
Heat a cast iron skillet over medium-high heat and brown the pork chops about halfway through - we're not cooking them completely, just getting some color on them. (Don't crowd the pan. Work in batches if you need to.)
Grease your baking dish and lay the browned chops flat on the bottom.
Pour the potato mixture and all that processed sauce right over the chops. Leave it uncovered - we want the top to get some texture.
Bake according to the box directions. When the chops are almost done, scatter the cheese over the top and let it melt and bubble.
Look, this isn't asado. Sometimes you need something fast that uses what's in the pantry. My Texas neighbors make this kind of thing all the time, and honestly, it's not terrible. Just don't serve it with Malbec.
