    yellow onion, sliced thick

    bone-in pork chops, thick cut
  • 14 ounces
    diced tomatoes with basil, garlic & oregano
  • kosher salt
  • black pepper
  • 8 ounces
    cremini mushrooms, sliced

Preparation

  1. Fire the oven to 350°F.

  2. Layer sliced onions in the bottom of a 9x13 casserole dish.

  3. Season pork chops aggressively with salt and pepper on both sides. Lay them over the onions.

  4. Top with mushrooms, then dump the whole can of tomatoes over everything.

  5. 1 hr

    Cover tight with foil. Bake 1 hour.

  6. 30 mins

    Pull the foil and let it rip another 30 minutes until chops are golden and liquid reduces. (Internal temp should hit 145°F)
