Mix pork strips with seasoning, lime juice, garlic, and pepper in a bowl.
Cover and refrigerate overnight. Let the flavors do their work.
Heat butter in a large skillet over medium-high heat. Add onions.
Cook onions until soft and starting to brown, about 5 minutes.
Add pork strips with their marinade. Stir-fry until pork is no longer pink, about 6 minutes.
Toss in mushrooms. Cook until they release their moisture and start to brown, another 4 minutes. (Don't crowd the pan or everything steams instead of browns)
Serve over rice.
