1. Preheat oven using convection setting at 325
2. Mix dry ingredients: flour, sugar, baking soda, baking powder, salt, oat bran, walnuts
3. In a large bowl, mix: bananas, oil, vanilla extract, milk
4. Using ice cream scoop put batter into muffin tins
5. Bake for 20 minutes
6. Let rest 5 minutes before serving
Adjust sugar based on ripeness of bananas
Scale recipe x3 yields only 34 muffins
You can also substitute rolled oats for oat bran
Walnuts can go on top of muffins or in batter
