Preheat your oven to 400°F and spray a baking dish with cooking spray.
In a medium saucepan, combine the corn, black beans, chicken, and diced tomatoes. Heat over medium heat, stirring occasionally, until everything is warmed through, about 5-7 minutes.
Warm the tortillas in the microwave for 30 seconds or wrap in damp paper towels to make them pliable.
Place each tortilla on a clean surface. Add about 3 rounded tablespoons of the heated mixture to the center, then top with about 3 tablespoons of shredded cheese. (Don't overfill — trust me, it makes rolling much easier)
Fold the bottom and top edges of the tortilla in slightly, then roll from one side to the other, keeping the filling tucked in tightly.
Place the burritos seam-side down in your prepared baking dish and bake for 10-12 minutes, until the tops are lightly golden and the cheese is melted.
