Listen, I'm not usually one for shortcuts in the kitchen, but sometimes you need cookies that come together in minutes. These remind me of the peanut butter treats my Australian friends grew up with — dead simple, no flour needed, just pure nutty goodness. A squeeze of lemon wouldn't go astray here either.
Preheat your oven to 180°C. Mix all ingredients in a medium bowl until you have a smooth dough.
Roll the dough into walnut-sized balls and place them 5cm apart on an unlined baking sheet.
Press each ball down with a fork in a crisscross pattern — this is classic peanut butter cookie territory, habibi.
Bake for 8-10 minutes until the edges are just set. Don't overbake them or they'll be dry. (They'll look underdone when you pull them out, but they'll firm up as they cool.)
