Ingredients

  • ¼ cup
    Peanut Butter, May Sub with Almond Butter
  • ½ cup
    Hot Water
  • ½ cup
    Rice Vinegar, May Sub with Apple Cider Vinegar
  • 2 tablespoons
    Brown Sugar
  • 1½ teaspoons
    Sea Salt
  • 1 tablespoon
    Soy Sauce, Or Tamari (GF)
  • 1 teaspoon
    Toasted Sesame Oil
  • 8 cups
    Cabbage, Shredded, Red and/or Green To Taste
  • Crushed Red Pepper, To Taste
  • ½ cup
    Peanuts, Roasted & Unsalted, May Sub wth Cashews

Preparation

    Mix the peanut butter and water until smooth

    Mix in vinegar, nectar, salt, tamari, crushed red pepper & sesame oil

  3. 2 mins

    Toss cabbage in dressing making sure to completely saturate it

  4. 2 hrs

    Cover the salad and refrigerate for 2 hours (minimum) up to 24 hours.

  5. Serve with peanuts on top.

Notes

Add a shredded carrot to add some more color if desired.
