Ingredients

    chicken thighs, boneless, skinless
  • 2
    red bell peppers, cut in strips
  • 1
    yellow onion, sliced thick
  • 4
    plum tomatoes, chopped
  • garlic, smashed
  • 1 teaspoon
    salt
  • 1 teaspoon
    dried thyme
  • ½ teaspoon
    fennel seeds
  • 1 tablespoon
    orange zest
  • ¼ cup
    fresh basil, chopped

Preparation

  1. Listen mija, throw everything except that basil into your slow cooker - el pollo, los pimientos, cebolla, tomates, ajo, all the seasonings, todo junto.

  2. Mix it all up with your hands like you mean it. Don't be shy - get in there and make sure that chicken is coated good.

  3. 7 hrs

    Put the lid on and cook on low 7-8 hours or high 3-4 hours. Your kitchen's gonna smell like heaven, I promise you that. (The chicken should fall apart with a fork when it's ready)

  4. Sprinkle that fresh basil on top before you serve it up with some white rice or yuca.
