Dump everything except the vinegar and pepper into your slow cooker - beans, pineapple, BBQ sauce, mustard, onion, bell pepper, and ham cubes. Give it a quick stir to distribute.
Cover and cook on low for 5.5 to 6 hours. The beans should be tender and the flavors melded together beautifully. (Don't lift the lid during cooking - every peek adds 15-20 minutes to your cook time)
Stir in the red wine vinegar and season with freshly ground black pepper to taste before serving. (The vinegar brightens everything up and cuts through the sweetness - trust me on this)
