This blackened chicken recipe is a go-to prepper meal. We like to prep 2 pounds of chicken (double the below recipe), and throw it in salads or lettuce wraps for a quick lunch. This recipe pairs incredibly with the Skinny Cilantro Lime sauce, so thats how we will write it.
- Pre-heat oven to 400 degrees
- Combine all spices in small ramekin to make the spice rub
- Toss 1" cubes of chicken in bowl with melted Tablespoon of melted vegan butter until covered
- Add spices and toss chicken until generously coated
- Place coated chicken in baking pan, and cook for 20 minutes, tossing chicken at the 10 minute mark
- Serve in lettuce wrap with Skinny Cilantro Lime Sauce and add shredded fat-free mozzarella

It's how ever much you want to use as a topping! That's the amount we used in our macro calculations though
