In a small bowl, mix together 1 teaspoon cajun seasoning, flour, sweet paprika, cayenne, salt and pepper. Toss the chicken chunks in this mixture until well coated.
Heat olive oil in a small skillet over medium-high heat. Add the seasoned chicken and cook 1-2 minutes per side until golden and cooked through. Set aside.
In a very small bowl, combine mayonnaise with remaining cajun seasoning, a pinch of paprika, and a pinch of cayenne. This will be your spread.
Spread the seasoned mayonnaise evenly on each tortilla. Layer with spinach leaves, the cooked chicken, red onion slices, and cilantro.
Fold the tortillas tightly, using the moisture from the mayonnaise mixture to help seal the wraps.
