Strawberry-Lemon Compote

I made this as a topping for my Instant Pot Cheesecake recipe (cinc.kitchen/recipes/bkJi...). Delicious, very fresh and bright taste, makes a perfect complement to cheesecake!

Ingredients

  • 1 pound
    strawberries
  • ⅓ cup
    sugar, granulated
  • 1 teaspoon
    vanilla extract
  • 2 tablespoons
    lemon juice

Preparation

  1. 10 mins

    Quarter the strawberries.

  2. Reserve 1/4 cup of strawberries, add the remaining to a saucepan with the sugar and vanilla. Place pan over medium heat.

  3. 15 mins

    Simmer, stirring occasionally, until it begins to thicken. Remove from heat.

  4. 2 mins

    Using an immersion blender, blend the mixture until smooth. Stir in remaining strawberries with the lemon juice.
