I made this as a topping for my Instant Pot Cheesecake recipe (cinc.kitchen/recipes/bkJi...). Delicious, very fresh and bright taste, makes a perfect complement to cheesecake!
Quarter the strawberries.
Reserve 1/4 cup of strawberries, add the remaining to a saucepan with the sugar and vanilla. Place pan over medium heat.
Simmer, stirring occasionally, until it begins to thicken. Remove from heat.
Using an immersion blender, blend the mixture until smooth. Stir in remaining strawberries with the lemon juice.
