Preheat oven to 350°F.

Zest 1 lemon (should yield ~1 tsp zest), and juice them both. If not using whole lemons, sub 7 tbsp lemon juice instead.
Cream flour, butter, and powdered sugar together and press into an ungreased 9"x12" baking pan.
Bake for 20 minutes.
Beat eggs together. Add lemon juice, lemon zest (if using), sugar, flour, and salt, and beat together until combined.
Pour mixture on the baked crust, and bake for 25 minutes.
Sprinkle with powdered sugar while still warm.
If you don't want to use the zest, or you only have lemon juice, just use 7 tbsp of lemon juice instead of the whole lemons. You can also sub in lime/grapefruit/rhubarb to experiment with the flavors.
