Ingredients

  • Graham Cracker Crust
  • 1½ cups
    graham cracker crumbs
  • 1 tablespoon
    sugar
  • ⅓ cup
    butter, melted
  • Pie Filling
  • 1 cup
    sugar, divided in half
  • ⅔ cup
    water
  • ⅓ cup
    lemon juice
  • 1 tablespoon
    lemon zest
  • 1
    gelatin envelope
  • 4
    egg yolks, beaten
  • 4
    egg whites
  • ½ teaspoon
    cream of tartar

Preparation

  1. 10 mins

    CRUST: Combine ingredients thoroughly in pie pan. Press evenly onto bottom and sides.

  2. 10 mins

    Bake at 350° F for 10 minutes. Let cool when finished.

  3. 10 mins

    FILLING: Add water, lemon juice, half the sugar, beaten egg yolks, and gelatin to a saucepan over medium heat until boiling.

  4. 30 mins

    Remove from heat, add lemon zest and let cool until mixture is the consistency of soft jello.

  5. 5 mins

    In a mixing bowl, beat egg whites to stiff peaks. Fold in cooled lemon mixture, cream of tartar, and remaining sugar. Mix together.

  6. Pour filling into cooled graham cracker crust. Chill in fridge overnight or until ready to serve.
