Walnut Cacao Nib Cookies

The easiest, most delicious cookies you'll ever bake!

Ingredients

  • ¾ cup
    brown sugar, preferably dark, light is also OK
  • ¾ cup
    granulated sugar
  • 1 teaspoon
    vanilla extract
  • 1 teaspoon
    baking soda
  • ½ cup
    unsalted butter, softened
  • 2½ cups
    all purpose flour
  • 1 teaspoon
    salt
  • ½ cup
    cacao nibs
  • ½ cup
    raw walnuts, coarsely chopped optional
  • 2
    large eggs
  • 2 pinches
    granulated sugar, add a little extra because I am using cocoa nibs and not sweetened chocolate chips

Preparation

  1. 2 mins

    Pre-heat oven to 375 degrees F. In a large mixing bowl, combine both sugars and remove all clumps

  2. 2 mins

    Mix in softened butter until texture is consistent throughout (I used my hands as it was easier). Again, there should be no clumps at this point.

    Add eggs one at a time and mix until smooth.

  4. 2 mins

    Add vanilla extract, baking soda and salt then mix.

  5. 5 mins

    Add in the flour all at once. Be careful as to not over-mix, just enough so there's no longer any white flour visible.

  6. 10 mins

    Fold in cacao nibs and optional walnuts. Texture is a bit firm at this point. Scoop dough into balls and place on lightly oiled baking sheet. I use a tablespoon to size each cookie.

  7. 12 mins

    Place in oven for 12-15 minutes or until lightly browned. I like them a little undercooked and have found that 12 minutes is the sweet spot.

Notes

This recipe is modified from thekitchn.com found here: thekitchn.com/how-to-make... I prefer cacao nibs over chocolate chips to reduce the sweetness level.
