Vegan Irish Soda Bread

Ingredients

  • 6 cups
    non-dairy milk, soymilk works well, have subbed part vegan yogurt
  • 6 teaspoons
    distilled white or cider vinegar
  • 2 tablespoons
    sugar
  • 12 cups
    flour, part whole wheat
  • 3 teaspoons
    baking soda
  • 3 teaspoons
    salt
  • ¾ cup
    melted vegan shortening, may use part olive oil
  • 2 tablespoons
    caraway seeds, OR Sunflower seeds optional
  • ½ cup
    raisins, OR currants optional

Preparation

  1. 3 mins

    Preheat the oven to 400. Line the bottom of three round springform pans with parchment paper (it makes a difference!) Oil the interior (or use non-stick spray)

  2. 11 mins

    Combine the non dairy milk with the vinegar and set aside for 10 minutes.

  3. 5 mins

    Whisk the dry ingredients in a large bowl, add the wet to the dry to just combine. Will be sticky and batter-like. Add the optional seeds or dried fruits if you like.

  4. 5 mins

    Knead in the bowl or on a floured surface briefly. Make three separate domes of dough.

  5. 2 mins

    Place the loaves in the pans and score each top with a cross.

  6. 45 mins

    Bake between 35 and 40 minutes, until hollow sounding when thumped. Cool slightly before removing from pans and cool further before cutting.

Notes

Probably need to increase by one loaf for a full retreat meal.
