Ingredients

  • 2 cups
    cooked quinoa, about 3/4 cup uncooked
  • 4
    eggs
  • 1 cup
    shredded zucchini
  • 1 cup
    shredded sharp cheddar cheese
  • ½ cup
    diced ham
  • ¼ cup
    loosely packed parsley, chopped optional
  • 2 tablespoons
    shredded or grated parmesan cheese optional
  • 2
    green onions, chopped
  • salt & pepper, to taste

  1. Preheat oven to 350 degrees.
