Preparation

  1. Right, first things first - whisk together the maple syrup, soy sauce, minced garlic, and a good crack of black pepper in a small bowl. That 2:1 ratio of maple to soy is key here.

  2. 30 mins

    Pop your salmon fillets in a baking dish and pour this gorgeous marinade over them. Give them a proper coating, flip them skin-side up, cover with cling film, and let them marinate in the fridge for at least 30 minutes. (Honestly, you can leave this overnight if you're organised - the flavours just get better.)

  3. When you're ready to cook, preheat your oven to 200°C (400°F). Flip those salmon fillets back to skin-side down in the dish.

    Remove the foil and switch to the grill setting (broiler). Cook for another 5 minutes until the top caramelises beautifully and the salmon flakes easily with a fork. (Keep an eye on it under the grill - that maple syrup can catch quickly.)
