Right, first things first - whisk together the maple syrup, soy sauce, minced garlic, and a good crack of black pepper in a small bowl. That 2:1 ratio of maple to soy is key here.
Pop your salmon fillets in a baking dish and pour this gorgeous marinade over them. Give them a proper coating, flip them skin-side up, cover with cling film, and let them marinate in the fridge for at least 30 minutes. (Honestly, you can leave this overnight if you're organised - the flavours just get better.)
When you're ready to cook, preheat your oven to 200°C (400°F). Flip those salmon fillets back to skin-side down in the dish.
Cover the dish with foil and bake for 15 minutes. The salmon should be nearly cooked through at this point.
Remove the foil and switch to the grill setting (broiler). Cook for another 5 minutes until the top caramelises beautifully and the salmon flakes easily with a fork. (Keep an eye on it under the grill - that maple syrup can catch quickly.)
