Add honey and ponzu (and red pepper flakes if you want some spiciness) to a bowl; whisk together until completely combined.
Pat salmon fillets dry and season generously with salt and pepper.
Add oil to skillet over medium-high heat. Once hot, place fillets in skillet skin-side-down and sear until color begins spreading up edge of fillet. Flip and sear the top.
Remove skin at this time if desired.
Add garlic and fry until golden and fragrant.
Reduce heat to medium and deglaze with honey/ponzu mixture. Reduce sauce until it makes a syrupy glaze. Flip fillets half way through, and baste frequently.
Once finished, season sauce to taste. Plate fillets and top with glaze and sesame seeds. Serve with rice or noodles.
