Ingredients

    canned salmon, drained and flaked
  • 2
    eggs, beaten
  • ½ cup
    seasoned dry bread crumbs
  • ¼ cup
    instant potato flakes
  • ¼ cup
    yellow onion, finely minced
  • garlic, minced
  • 1 teaspoon
    dried dill
  • ½ teaspoon
    celery salt
  • ½ teaspoon
    salt
  • ¼ teaspoon
    black pepper, freshly ground
  • 3 tablespoons
    olive oil, for frying

Preparation

  1. Flake da salmon real good in one medium bowl, checking fo any bones. Mix in da beaten eggs, bread crumbs, potato flakes, minced onion, garlic, dill, celery salt, salt, and pepper. Everything should stick together nice.

  2. Shape da mixture into 2-inch balls with your hands, then flatten 'em down to about half-inch thick patties. Should make about 6-8 patties. (Wet your hands little bit if da mixture stay sticking too much.)

  3. Heat da olive oil in one medium skillet over medium heat until it shimmers but no smoke.

    Cook da patties in batches, about 5 minutes each side until golden brown and crispy. No crowd da pan - give each patty space fo breathe. (Don't flip too early or they'll fall apart on you.)
