In a small bowl, whisk together the honey, vinegar, mustard, and onion flakes until smooth. The honey should coat the back of your spoon — this tells you it will cling properly to the sausage.
Heat a large skillet over medium heat. Add the sliced sausage and cook until it begins to brown, about 3-4 minutes.
Pour the honey glaze over the sausage and stir gently to coat everything evenly. The kitchen will smell like autumn itself.
Layer the sliced potatoes and apples over the sausage. Cover the skillet and let it simmer gently until the potatoes are fork-tender, about 15-20 minutes. (Check once halfway through and add a splash of water if the pan looks too dry)
Remove the lid and let any remaining liquid reduce for 2-3 minutes. Serve immediately while everything is hot and fragrant.
