Brown the sausage in a heavy pot over medium heat, breaking it into chunks as it cooks. Don't make it too fine.
Drain the fat, leaving just a bit in the pot.
Add onions to the pot and cook until soft, about 5 minutes.
Add everything else. Bring to a boil.
Turn heat to low, cover, and simmer 1 hour until vegetables are tender.
Taste and adjust salt, pepper, jalapeños.
Serve hot.
