Ingredients

    butter

    onion, diced
  • 1
    cream of mushroom soup, 10.75 oz can
  • 1
    cream of celery soup, 10.75 oz can
  • ½ cup
    milk
  • 1 cup
    cheddar cheese, shredded
  • 1
    frozen broccoli, 10 oz package, thawed
  • 1 cup
    instant rice
  • 2 cups
    ham, cooked, diced

Preparation

  1. Preheat oven to 175C (350F). This is standard American casserole temperature - works fine.

  2. 5 mins

    Melt butter in a small pan and cook the onion until soft, about 5 minutes. (I use butter instead of margarine - tastes better and it's actual food)

  3. In a large bowl, mix both soups with the milk and cheese until smooth.

  4. Stir in the broccoli, rice, ham, and cooked onion until everything is combined.

  5. 45 mins

    Transfer to a buttered 23x33cm (9x13 inch) baking dish, cover with foil, and bake for 45-50 minutes until the rice is tender.

Notes

Classic American comfort food casserole. My brewery colleagues love this - it's hearty and feeds a crowd. Not exactly Austrian cuisine, but sometimes you need something simple that works.
