Applesauce Cookies

This is probably the best applesauce cookie recipe I have ever had. Grew up with many batches of this made by my mom. The recipe calls for cold coffee, but since I am not a coffee fan, I have always substituted additional applesauce for that amount of coffee.

Ingredients

  • 1 cup
    Shortening or butter
  • 2 cups
    Packed Brown Sugar
  • 2
    Eggs
  • ½ cup
    Cold Coffee (see note about substitutions)
  • 2 cups
    Well-Drained Thick Applesauce
  • 3½ cups
    Flour
  • 1 teaspoon
    Baking Soda
  • 1 teaspoon
    Salt
  • 1 teaspoon
    Cinnamon
  • 1 teaspoon
    Nutmeg
  • 1 teaspoon
    Ground Cloves
  • 1 cup
    Raisins
  • ½ cup
    Coarsely Chopped Nuts

Preparation

    Mix shortening, sugar, and eggs thoroughly.

    Stir in coffee (or substitute applesauce or other liquid if you don't prefer coffee flavor) and applesauce.

    Measure flour.

    Mix dry ingredients and stir into applesauce mixture.

    Chill at least 2 hours prior to baking.

    Heat oven to 400 degrees.

    Drop rounded tablespoonfuls of dough about 2" apart on lightly greased baking sheet.

    Bake 9 to 12 minutes or until touched and almost no imprint remains when touched. If desired, frost. Makes 7 to 8 dozen.

    Can the shortening be replaced with other fat, like butter?

      I think I have successfully substituted with butter before.
