Substitute cooked quinoa for the cooked couscous to make it gluten free!
Bring water, butter, and a pinch of salt to a boil. Take off the heat and stir in couscous. Cover and let sit for 10 minutes.
Fluff up couscous with a fork, and toss with orange zest, nuts, fruit, and herbs. Add oil if needed. Top with onions, if using. Serve at any temperature.
