Herb Compound Butter

This compound butter makes a great seasoning to slather on roasts.

Ingredients

  • 12 tablespoons
    Unsalted Butter
  • 3
    Sprigs of Rosemary, Finely Chopped Needles
  • 3
    Sprigs of Thyme, Finely chopped leaves
  • 1 tablespoon
    Salt, Kosher
  • 2
    Cloves of Garlic, crushed and chopped
  • 1
    Sprig of Dill, Finely chopped

Preparation

  1. 10 mins

    At low heat, mix the ingredients in a saucepan until the butter is entirely melted. Stir occasionally.

  2. 5 mins

    Let ingredients cool in pan

  3. 5 mins

    Place pan atop cool surface (block of ice, frozen peas, etc.) and whisk occasionally to keep ingredients evenly distributed as the butter solidifies

  4. 1 min

    Store in cool place to prevent stratification of components
