Preparation

  1. Preheat your oven to broil and line a big baking dish with foil (trust me on the foil — cleanup is everything).

  2. Plop the chicken in the dish and mix the coriander, salt, and chutney in a small bowl.

  3. Brush half the chutney mixture all over the chicken. The 5-year-old loves helping with this part.

  4. 10 mins

    Broil for about 10 minutes, then flip the chicken and brush with the rest of the glaze. (Don't worry if it looks a little messy — that's the point)

  5. 10 mins

    Broil another 10 minutes until the chicken is golden and cooked through (165°F if you're checking).

  6. Squeeze lime juice over everything before serving.
