Pre-heat oven to 375°F.
Pound chicken breasts flat and sprinkle with salt and pepper.
Heat olive oil over medium-high heat in an oven-proof skillet. Sear both sides of chicken breast, then remove and cover with foil.
Turn heat to medium, then add chicken broth, lime juice, cilantro, onion, and red pepper flakes. Simmer until reduced to ~1/4 cup, scraping up the browned bits in the pan.
Turn off heat, and add heavy cream and butter. Stir in until butter is completely melted.
Add chicken back into the sauce and place skillet in oven. Cook for 5-10 minutes until chicken is fully cooked (165°F in the middle).
Serve chicken with sauce spooned over top. Garnish with lime wedges, and hot sauce if desired.
Serve with some sides like elotes corn and Mexican rice! Or some roasted veggies.
