Preheat your air fryer to 400°F. Season pork chops with salt, paprika, garlic powder, and dill on both sides.
Air fry pork chops for 12-14 minutes, flipping halfway through, until internal temp hits 145°F. (Trust the process here - they'll look perfect and juicy, way better than pan-frying!)
While chops cook, sauté sliced onion in a skillet over medium heat until softened, about 5 minutes.
Add water, caraway seeds, and a pinch more salt to the onions. Simmer for 2-3 minutes until fragrant.
Remove from heat and stir in sour cream until you have a creamy sauce. Don't let it boil or it'll curdle.
Slice air fryer pork chops and serve with the sour cream sauce spooned over top. Garnish with fresh parsley.
