Heat olive oil in a pan and add lemongrass, ginger & garlic. Cook for 1 minute.
Add shitake. Cook for 2 more minutes.
Add rest of mushrooms, cauliflower & tamari and cook for 3 more minutes.
Add apple cider vinegar, soy sauce, walnuts & green onion. Cook for 1 more minute.
Salt to taste and serve in lettuce leaf cups.
