    Marinated Kalamata Olives, May Sub with Marinated Artichoke Hearts

    Capers
  • 8 ounces
    Grape Tomatoes, Quartered
  • 2 ounces
    Arugula
  • ¼ cup
    of Walnuts
  • ¼
    Onion, Diced
  • 1
    Garlic Clove, Minced
  • ½
    Zucchini, Diced
  • ¼ teaspoon
    Olive Oil
  • 1
    Carrot, Diced
  • 1
    Bell Pepper, Diced

Preparation

  1. 10 mins

    Cook pasta according to instructions, run under cold water and set aside.

  2. 10 mins

    Heat olive oil and sautee carrots for 2 minutes. Add zucchini, garlic and onions and sautee for 2 more minutes. Set aside and let cool.
