Homemade chipotle mayo in just a couple minutes -- based on J Kenji Lopez-Alt's recipe on Serious Eats (seriouseats.com/recipes/2...).

Ingredients

  • 1
    egg yolk
  • 1 cup
    oil, neutral-tasting is best
  • 1 tablespoon
    lime juice
  • 2
    cloves garlic, minced
  • 1 teaspoon
    chipotle chili powder
  • 1 teaspoon
    dijon mustard optional
  • 2 tablespoons
    chives, Finely chopped optional
  • salt + pepper, to taste

  • Immersion Blender

Preparation

  1. Add egg yolk, lime juice, garlic, chipotle powder, and dijon mustard (optional) to a container that can fit an immersion blender well. The ingredients must be able to reach the blades of the blender -- if not, double the recipe or find a better container.

  2. 20 secs

    Add oil, and let settle for a few seconds.

  3. 1 min

    Put the immersion blender all the way into the container, with the head touching the bottom. Blend on high speed (without pulsing or moving the head) until the mayonnaise starts to set up.

  4. 1 min

    Slowly lift the head and emulsify all the oil in the container.

  5. Season to taste with salt + pepper, garnish with chives.
