Fill Instant Pot with 1 cup of water. Place trivet in pot, and place cod fillets on trivet. Season fillets with salt and pepper.
Set Instant Pot to Manual for 4 minutes.
The Instant Pot will take around 10 minutes to get up to pressure.
Combine diced nectarine, diced cherries, and cilantro in a small bowl. Zest and juice the lime into the bowl. Stir to combine.
When Instant Pot is finished cooking, do a natural release for 5 minutes, and then quick release.
Plate fillets and spoon the salsa on top. Enjoy!
This recipe is for frozen cod. If using fresh, change cook time to 2 minutes with an immediate quick release.
Serve with wild rice and some roasted veggies for a delicious meal.
