Preheat your oven to 350°F and butter a 13x9-inch baking dish.
Melt the butter in a medium skillet over medium-high heat, then add the sliced mushrooms.
Sauté the mushrooms until they're tender and all their liquid has evaporated - this takes about 6 minutes. Set aside to cool. (Don't skip cooking out that mushroom liquid or your strata will be soggy)
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Stir in the cooled mushrooms and leftover stuffing, mixing everything until it's evenly distributed.
Transfer the mixture to your prepared baking dish and sprinkle the grated Swiss cheese evenly over the top.
Bake for about 50 minutes, until the center is set and the top is golden brown and gorgeous.
