Add Thai chilis and garlic to a mortar and mash until broken apart.
Add remaining dressing ingredients and stir to combain.
Combine tofu, ginger & onions. Place cabbage on top, to the side.
Pour dressing over salad ingredients, top with fried rice and peanuts and serve immediately.
Tip: remove the tofu from the water and cube ahead of time to avoid a watery flavor
To deep fry the rice, heat an inch of oil in a small pan and scoop a spoonful of cooked rice into the oil. Fry until crispy and remove with a slotted spoon to a paper towel.
