Crispy Rice Tofu Salad

Ingredients

  • 8 ounces
    Medium Firm Tofu, Patted Dry & Cubed
  • ¼ cup
    Red Onion, Thinly Sliced
  • ½ inch
    Fresh Ginger, Julienned
  • ½ cup
    Green Cabbage, Chopped
  • ¼ cup
    Roasted Peanuts
  • 1 tablespoon
    Cilantro, Chopped
  • 1 teaspoon
    Deep Fried Rice
  • For the Dressing
  • 1
    Garlic Clove
  • 3
    Thai Chilis, May use more or less to taste
  • Limes, Juiced
  • 2 tablespoons
    Fish Sauce, May sub Soy Sauce
  • 1½ tablespoons
    Palm Sugar, Finely Chopped
  • 1 tablespoon
    Cilantro, Finely Chopped

Preparation

  1. 2 mins

    Add Thai chilis and garlic to a mortar and mash until broken apart.

  2. 1 min

    Add remaining dressing ingredients and stir to combain.

  3. 2 mins

    Combine tofu, ginger & onions. Place cabbage on top, to the side.

  4. 2 mins

    Pour dressing over salad ingredients, top with fried rice and peanuts and serve immediately.

Notes

Tip: remove the tofu from the water and cube ahead of time to avoid a watery flavor

To deep fry the rice, heat an inch of oil in a small pan and scoop a spoonful of cooked rice into the oil. Fry until crispy and remove with a slotted spoon to a paper towel.
