Sauce: Combine all of sauce ingredients. Use half the sauce to marinate the tofu for 20 minutes.
Caramelized Onions: Heat the oil until shimmering. Reduce heat to medium. Add the onions and spread evenly over the pan in one layer. Allow bottoms to brown then stir. Repeat process for 15 minutes. Add salt and sugar at the 10 minute mark. Set aside.
Toasted Cashews: Heat the oil then add cashews and cook for 1 minute or until lightly brown. Set aside
Tofu: Heat the oil then add the garlic. Stir fry for 1 minute then add the marinated tofu. Cook for 2 more minutes then add in the toasted cashews & caramelized onions. Slowly pour in the remaining sauce, stirring constantly and cook for 1 more minute. Serve over rice.
