Preparation

  1. 20 mins

Peel and slice 5 large potatoes. (slice potatoes in half then slice about a 1/4 inch thick). Put your potatoes in a bowl and coat them with 2 Tbsp of olive oil. Then slice your sausage link about the same width and set aside in a separate dish.

  2. 10 mins

In a skillet on Medium heat, add 2 Tbsp of olive oil. Brown up one side of your sliced sausage. Once you flip them to brown the other side, add in 1 cup of chopped onion. When the onion is translucent and the sausage is browned on both sides, remove it from the pan and set aside.

  3. In that same pan add in 1 can of drained green beans. Then add in 1 Tbsp, of minced garlic. Once cooked (The canned green beans are already cooked so this won't take long), place green beans aside with your sausage and onions.

  4. 5 mins

In the same skillet, add 2 Tbs olive oil and add your sliced potatoes. Fry the potatoes until both sides are golden brown and fork tender. Season the potatoes with salt, pepper, and red pepper.

  5. (cook potatoes in a single layer. Split in two parts if they don't all fit in the pan as a single batch)

  6. 5 mins

Add in your Sausage, onion and green beans and let it cook for a couple more minutes.

  7. Garnish with chives...and it's done!
