    cream cheese, 8 oz packages
  • ¾ cup
    sugar
  • 1 tablespoon
    vanilla
  • 3
    eggs
  • For the crust:
  • 40
    vanilla wafers, crushed (1 1/2 cup)
  • 3 tablespoons
    butter, melted
  • For the mousse:
  • 1
    cream cheese, 8 oz package
  • ¼ cup
    sugar
  • 1 teaspoon
    vanilla
  • 8 ounces
    Cool Whip, 1 package

Preparation

  1. 5 mins

    For the crust:
    Crush wafers and mix well with melted butter. Press into bottom of 8-inch springform pan.

  2. 5 mins

    Mix cream cheese, sugar, and vanilla well. Add one egg at a time and mix until combined.

  3. 50 mins

    Bake at 325 for 50-55 minutes. Should be set in the middle. Some cracking along the edges is to be expected.

  4. 2 mins

    For the mousse:
    Beat cream cheese, sugar, and vanilla together. Fold in Cool Whip. Top cooled cheesecake.
