Ingredients

    avocados, ripe
  • garlic
  • 2 tablespoons
    fresh lime juice
  • ¼ cup
    white onion, roughly chopped
  • ½ cup
    cherry tomatoes, halved
  • ¼ cup
    fresh cilantro, stems and all
  • ½
    jalapeño, seeded if you want it mild
  • salt, to taste

Preparation

  1. Scoop the avocado flesh into your food processor or blender cup, discarding the pits.

  2. Add the garlic, lime juice, onion, tomatoes, cilantro, and jalapeño to the cup. (If using a small blender cup, halve the tomatoes so everything fits nicely.)

  3. Pulse 3-4 times until everything is chopped and mixed but still has some texture — you want chunky guac, not baby food. (Stop and scrape down the sides if needed to make sure everything gets chopped evenly.)

  4. Taste and add salt, plus more lime juice if it needs brightness.

  5. 30 mins

    Let it chill in the fridge for at least 30 minutes before serving if you have time — the flavors meld beautifully.
